It's been a good food weekend so far.

I stopped by the Asian market at some point this week (Thursday?) and restocked the Chinese sausage and oyster sauce. I also got some bok choy, a bag of frozen shrimp, and some of those big tapioca noodles I had a while back. I used the last of my frozen chicken broth to make a couple bowls of noodle soup with shrimp and bok choy, which was very tasty.

Last night I made some honey mustard chicken with the chicken breasts I found on sale at Publix. I cut each breast into two big chunks (as opposed to thin filets) and dredged them in flour with a little salt and pepper. I browned them in a cast iron pan with a little canola oil and then put them in a small glass casserole with a generous amount of honey mustard (approx. 1/3 c. yellow mustard, 1/3 c. honey, and 1/4 c. red wine vinegar), I put the chicken in the oven at 350 and started a pot of rice to use as my timer. Just before everything else was done, I heated up some more oil in the pan and tossed in half a head of sliced bok choy. After a few seconds of wilting, I took it of the heat and tossed in some balsamic vinaigrette dressing. It was all very tasty, and also had a reprise as lunch today.

The girl has taken a liking to King's Hawaiian rolls, so I decided we should try making them ourselves. I picked a random Portuguese sweet bread recipe and we put it together this morning. She had a good time with the kneading, just like I did when I helped my mom make pizza dough at her age. The rolls came out very tasty, though I probably should have lft them in the oven another 5 minutes. They're very dense, but that's not a bad thing in my book.

There's been a bag of 6 Granny Smith apples on the counter for quite a whle, and nobody's been eating them. I decided to put them out of their misery and into a nice apple crisp. The new peeler we got recently was much better than the old metal torture device we used to have, and soon I had a big pan full of nice sliced apples ready for sugar, cinnamon and ginger. A nice layer of crumb topping (with chopped macadamia nuts) went on top, and it's in the oven right now.

More leftovers for supper, I reckon, and there will still be plenty left for when [livejournal.com profile] adelavanbrugge gets home late tonight. I also got a chicken and other requirements for a new pot of chicken soup. I'll probably do that tomorrow night.
