I was with you until you got to the canned corn (well, substituting turkey bacon in my brain). This does sound good, though. I would probably puree with my stick blender rather than using potato flakes (since we don't keep them in the house).
I think I still have a bag of frozen corn in the chest freezer from this summer that needs using. This being the month of "use up the crap in the chest freezer before all the fresh things start appearing again", hence the zucchini bread for the dance tonight.
